Missy's Hot Chocolate Mix!

Winter may be over officially as of today, but who doesn't enjoy some hot cocoa on cool spring nights! Try to mix it up a little and make your own using our recipe below!

Ingredients:

  • 8QT Box of Carnation instant dry mix
  • 1 lb box Nestle Quik chocolate mix
  • 1 6oz jar coffee mate-any flavor you choose
  • 1 c powdered sugar
Directions:
  1. Combine and stir all ingredients in large bowl.
  2. Store in air tight container
  3. To use, mix 1/3 c mixture in hot water
  4. Enjoy!!

Tarragon Roasted Salmon

This meal is one we HIGHLY recommend, it's amazingly healthy at only 315 calories a serving AND it tastes divine! Try it, and be prepared to fall in love!

Ingredients:

  • 2 to 3 table spoons Dijon mustard
  • 2 tablespoons honey
  • ¾ teaspoon dry mustard
  • 2 teaspoons dried tarragon or to taste
  • ½ teaspoon salt
  •  Fresh ground pepper
  • 4 center cut skinless salmon fillets
Directions:
  1. Heat oven to 400 degrees.
  2. Combine the Dijon mustard, honey, dry mustard and tarragon in a medium bowl, stir until smooth.
  3. Add salt and pepper to taste.
  4. Place salmon fillets in a lightly greased, shallow baking dish.
  5. Brush fillets with mustard mixture.
  6. Roast until salmon is just cooked through and separates easily with a fork, 10-12 minutes.

Hawaiian Pot Roast

This pot roast is perfect comfort food! Give it a try, and let us know how you like it at your next appointment!

Ingredients:

  • 3-4 lbs. blade pot roast
Marinade Ingredients:

In 12 oz. water glass add:

  • 2 inches soy sauce
  • 2 Tablespoons brown sugar
  • 2 Tablespoons lemon juice
  • 1 tablespoon bourbon or vermouth
  • 2-3 garlic cloves (diced)
  • ½ teaspoon ginger
  • Fill rest of glass with water; stir.
Directions:
  1. Sprinkle meat with meat tenderizer and let sit overnight in the refrigerator.
  2. Place meat in a large glass dish.
  3. Poke meat with fork.  Pour marinade over meat and marinade for 3 to 4 hours, turning meat every ½ hour.
  4. Broil pot roast 20 minutes on each side.
  5. Slice into thin strips and serve.

Grape Salad

Ingredients:

  • 5 pounds red seedless grapes
  • 8 oz sour cream
  • 8 oz cream cheese
  • 1 tsp. vanilla
  • ¾ cup sugar

Toping:

  • 1 cup chopped walnuts
  • ¾ cup brown sugar
Directions:
  1. Wash grapes, pat dry.
  2. In a large bowl, mix sugar, sour cream, cream cheese and vanilla until creamy.
  3. Add grapes and mix to coat.
  4. Pour into serving dish.
  5. Mix topping together and sprinkle over grape mixture.
